Perfect light lunch for a sunny Sunday afternoon on the Patio …
Asian Chicken Radicchio Wraps, a side of broccoli slaw and a glass of Pinot Grigio. Add a splash of fabulous friends and it just doesn’t get any better than this!
I made this last weekend and I have to share. It’s a one pan dish that you can easily cook on the grill., so it is perfect for a light lunch on the Patio. Easy, tasty and fun to make as everyone can assemble their own wrap. Add a side of smoked slaw and a glass of white wine to round out the meal. You can find many variations of this recipe on-line; this my version.
Ingredients
- Extra Virgin Olive Oil
- 2 pounds ground chicken
- 1 medium sweet onion, chopped
- 4 Tablespoons Mirin
- 1 1/2 tablespoon Sesame oil
- 1 tablespoon Oyster Sauce
- 1 tablespoon light Soy Sauce
- 1 8-ounce can water chestnuts, drained and chopped
- 2 cloves garlic, peeled and chopped
- 1/2 cup sliced green onions
- 2 to 3 heads radicchio
- Plum Sauce
Directions
Peel the leaves off the Radicchio and set aside. Heat EVOO in large heavy pan over medium heat, add onions and cook until just tender.
Add the chicken, breaking it up and cook for 6 to 8 minutes, mixing the chicken with the onions. Stir in the Mirin and cook for 4 to 5 minutes. Then add the Sesame oil, Sesame seeds, Oyster Sauce, Soy Sauce, Water Chestnuts and garlic. Cook another 5 or so minutes or until the mixture caramelizes. Stir in the green onions and remove from the heat.
To serve, spread a little Plum Sauce on the Radicchio leaf, add a spoonful of the chicken, roll up and enjoy.
