When I’m short on time (like right now) or just want a fast meal but crave something a little more substantial than a salad, I turn to my go-to quick dish: peas & pasta. It’s fast, delicious and not unhealthy.
INGREDIENTS
- Favorite Pasta
- Good Extra Virgin Olive Oil
- Frozen Peas * – more if you love them, less if you like them.
- Cheese – any good hard cheese, I like Asiago
- Seasonings – Sea Salt, fresh ground Pepper, red Pepper Flakes

Start the pasta and cook according to the directions.
Place the frozen peas in a large bowl.
When the pasta is done, drain and pour the pasta over the peas, drizzle EVOO over the pasta and give a light stir.
Let the pasta sit a few minutes.
In the meantime shave slices of cheese and set aside.
Stir the pasta to distribute the peas evenly and season to taste.
Spoon the pasta into a bowl and sprinkle the shaved cheese on top.
In the summer I’ll make this, pour a glass of wine and enjoy on the patio.
* Variation: In the summer I like to use Snap Peas; to cook properly you’ll have to bury them under a steaming pile of spaghetti until tender.
