I’ve been writing for hours and the only sustenance I’ve had is coffee. It’s almost lunch and I’m hungry but busy. Which means I want something quick and easy. I scavenge through the fridge and come up with leftover horseradish cheddar from last weekend’s wine tasting, bulky rolls and green onion from the garden. Looks like grilled cheese.
I lay my ingredients out:
Green onions? And the bulky roll is, well … too bulky. So I give the roll a quick shave:
I buttered each half of the roll on one side, mayo on the other. After pre-heating a pan on medium high heat, I placed one half of the buttered roll down, sprinkled fresh ground pepper, layered on the cheese and green onion which I had cut into thin strips while the pan was heating:
Top it off with the other half of the roll and grill until golden brown. You’re done. 7 minutes tops! In fact, I just took a bite while finishing this post:
The green onions provide a mild yet tasty contrast to the kick of the Horseradish Cheddar . Quick and Delicious! Now, back to work.
