The weather is not 100% cooperative but little by little we’re getting there: last weekend my friend Kim came for a visit, the girls from work stopped by for a few Marga’ronas during the week and today my friend from college is coming for a cookout. Guess what I’ll be making?

CAESAR SALAD ENDIVE SPEARS
romaine lettuce
green onion
asiago cheese
black pepper
croutons
caesar dressing
endivein a bowl, mix chopped romaine lettuce, green onion & shredded asiago cheese. season with black pepper & caesar dressing. place croutons in a small plastic bag & pound lightly with a meat mallet. split endive into spears and arrange on a platter. fill spears with salad mix, sprinkle with croutons and finish with grated asiago & fresh ground pepper.
